Stuffed hunchback salmon

Ingredients:
– 1,5 kg hunchback salmon
– 2-3 middle size onions
– 1-2 carrots
– 500 g champignon or any other kind of mushrooms
– mayonnaise
– oil
– salt
– pepper
– greens
– lemon
How to cook stuffed hunchback salmon? Recipe:
Wash the hunchback salmon trunk, gut it, and add some salt to taste.
Remove fish backbone together with bones, making undercuts almost up to the skin. Cut off filet from the backbone, cut it in small pieces.
Peel the onions, chop them by very small pieces. Peel the carrots, grate it finely. Put together onions and carrots, fry all over in oil until golden color, add cut champignons. Mix the ready mixture with fish pieces, stuff the trunk of the salmon, saw with a thread, put some mayonnaise on top.
Pour half glass of water on a baking tray and put the stuffed salmon trunk on it.
Bake the fish in a preheated oven at 180oС for 40 minutes. Decorate with greens and slices of lemon.
